Alois - Dallmayr Fine Dining
This is a serious, France leaning cellar of over 1,100 bottles built around Burgundy, with the Côte de Beaune and Côte de Nuits together making up the spine and deep Champagne support behind them. The strength is grower depth: Domaine Roulot shows up 36 times, Liger Belair and Perrot Minot run deep in the Côte de Nuits, and Jacquesson and Krug anchor the sparkling section. Don't overlook the German pockets, Franken and Baden, where Weingut Fürst and Weingut May give you smart, more accessible bottles, plus a Rhône block split across north and south led by Emmanuel Reynaud. There is no by the glass program, so everything sells by the bottle, and prices start around the 120 euro mark and climb hard from there. This list rewards a guest who knows Burgundy and wants verticals and named growers, not someone hunting a quick pour.
