Amara at Paraiso
This is a red and Burgundy driven list, 254 bottles deep, built around white Burgundy and Champagne with real conviction. The bench in Côte de Beaune is the heart of it, with multiple bottlings from Roulot and Dominique Lafon, and the sparkling section runs forty wines including a solid run of grower Champagne alongside houses like Ruinart. Reds dominate at 144 selections, anchored by Côte de Nuits names such as Georges Roumier and reaching up to Bordeaux trophy bottles like Lafite Rothschild near six thousand dollars, but the median sits around 179 and entry points start at 16, so there is plenty to sell without scaring anyone. Note the South American depth too, Chacra and Garzón both show up several times. The glass program is modest at 19 pours, so steer curious tables toward the by the bottle list, where the collector and the Burgundy lover both get rewarded.
