This is a 213 bottle list built around Burgundy and Champagne, with Bourgogne the clear backbone at nearly fifty selections and real depth from growers like Paul Pillot, Domaine Leflaive, and Jean Claude Ramonet. Germany is a genuine strength too, not an afterthought, with Mosel, Rheinhessen, and Nahe well covered and producers like Hofgut Falkenstein in play, so it leans hard toward white wine and bubbles. Reds are the thin spot at only nineteen bottles, though Piemonte holds up the quality there with Roagna and Bruno Giacosa. There is no by the glass program, so everything is sold by the bottle, and prices run from around 1200 to 1950 DKK on the examples we have, meaning guests are committing.
