The backbone is California cult Cabernet and Napa weight, with two pours each of Opus One and Dominus alongside Joseph Phelps, Bond, and Kongsgaard, plus a thread of Tuscan reds from Petrolo, Fontodi, and Le Ragnaie. The few whites punch well above the count, anchored by Egon Müller Riesling and Domaine des Comtes Lafon white Burgundy. There is no by the glass program, so everything is a bottle commitment, and pricing runs high, from roughly 4480 HKD into the 32000 HKD range at the top. It rewards a guest who wants a serious red to match the food and is ready to spend, not someone hunting value or variety by the glass.
