This is a 345 bottle list with no wines by the glass, so everything here is a full commitment from the table. It leans French and classical on paper, with Bordeaux, the Rhone, and Champagne well represented, but the real signature is local: Domaine Arretxea shows up 19 times and Irouleguy from the Basque country runs deep, so this is a list that wants to pour its own backyard. There is also a strong natural and offbeat streak, with serious depth on Jean François Ganevat and Domaine de la Pinte out of the Jura plus Château de Beaucastel in the southern Rhone. Reds and whites are roughly balanced at around 105 each, sparkling is substantial, and rosé and dessert are almost an afterthought. Pricing is not fully captured but the examples sit around 100 to 115 euros a bottle, so this rewards a guest who is ready to spend and trusts you to steer them toward Irouleguy or the Jura.
