El Serbal
This is a white wine list at heart, and specifically a German Riesling list: with 217 whites against 279 reds, the real depth sits in the Mosel and Pfalz, where Burklin Wolf, Donnhoff, Egon Muller, Fritz Haag, and Reichsgraf von Kesselstatt all run deep. Around that core it builds out a serious Champagne section of 53 references topped by Dom Perignon, strong Spanish reds anchored by Vega Sicilia and Remelluri out of Rioja, and a generous 64 dessert and fortified wines including Tokaji from Oremus. At 678 wines it is a big book, but the 62 by the glass give you real room to work the floor, and the native pricing shows bottles starting low, so it is not purely a trophy list. Point Riesling drinkers and Champagne lovers here first, and lean on the Spanish reds for the table that wants something familiar with weight.
