Producer concentration tells the story: Fabienne Cottagnoud, Denis Mercier, and Jean René Germanier each show up well over a dozen times, so you can lean on growers you get to know rather than scattered one offs. France is the main outside anchor, with Bordeaux the largest single red category and a solid Champagne section, alongside smaller blocks of Italian and Spanish red. At 332 bottles the list is broad and red leaning, with whites strong on the Valais side, and there is a meaningful sparkling presence too. The glass program is small at 13 pours, so by the bottle is where the range lives, and this list rewards a guest who wants to drink Swiss and explore Valais growers in depth.
