Galatoire's
This is a sparkling driven list, built on Champagne above all else, with non vintage Brut, tete de cuvee bottlings, and large formats all running deep, plus a strong showing of grower houses like Dhont Grellet and Caillez Lemaire alongside the classics Veuve Clicquot, Louis Roederer, and Billecart Salmon. Whites carry the rest of the weight, especially white Burgundy out of Chablis Premier Cru and Meursault, while the red section is comparatively lean at 67 bottles, anchored by Bordeaux in large format and names like Chateau Le Puy and Beaucastel. Prices stretch from a $12 pour all the way to an $8,400 Caillez Lemaire, but with a median around $255 this is a high end list, not a casual one, so guide guests accordingly. The 28 glass pours give you room to work the floor without opening a bottle. It rewards a guest who loves bubbles and white Burgundy and is ready to spend.
