Gatsby’s
This is an approachable, value driven list built for a working floor, ninety wines that lean red and stay affordable, with a median bottle near $30 and plenty under that. Half of it pours by the glass, including a large on tap program of reds, whites, and rose, so you can sell good wine without opening bottles. California is the backbone, with Mc Manis appearing ten times as the workhorse and step ups like Austin Hope and Shafer giving you something to trade people up to. There is real ceiling at the top, the Shafer TD9 Cabernet at $140, Mira Cabernet and Turley Presenti Zinfandel, plus a couple of French anchors in Joseph Mellot from the Loire and Château Brown from Pessac Léognan. It rewards the guest who wants a solid pour at a fair price more than the collector, so guide most tables to the by the glass and the California reds.
