This is one of the deepest white Burgundy cellars you will work off of, built around the Côte de Beaune with serious verticals from Meursault, Chassagne Montrachet, and Puligny Montrachet, plus a stacked grand cru section. Whites dominate at 938 listings against 519 reds, and the producer roster reads like a who's who of the region, Pierre Yves Colin Morey, Domaine Leflaive, Domaine de Montille, and Dujac among them. Champagne runs grower deep with Jacques Selosse and Krug alongside Taittinger, and there is real strength in German Riesling through Keller and in Piemonte for the red drinker. This is a bottle list at high prices, with native pours commonly in the 3200 to 4500 DKK range, so set expectations accordingly. There is essentially no by the glass program here, just one pour, so this rewards the guest committing to a full bottle and someone who knows mature Burgundy.
