Kilian Stuba
This is a Champagne driven list at heart, with 152 sparkling bottles and the deepest concentration in Reims and Epernay, running from grower houses like Nicolas Feuillatte up through Krug and Ruinart. Riesling is the other backbone, split between Germany and Austria, and the Austrian section runs deep on its own producers, with Jurtschitsch, Bründlmayer, and Ernst Triebaumer all well represented. The reds are lighter in emphasis, leaning on Austrian cuvees and a smaller block of Burgundy. Note there is no by the glass program here, so everything moves by the bottle, and prices sit at a fine dining level with examples in the 185 to 229 EUR range. This rewards a guest who wants Champagne or serious Riesling and is ready to commit to a full bottle.
