This is a France first cellar built on Champagne and red Bordeaux and Burgundy, with reds making up more than half the 307 selections and a real spine of Tuscany and Piedmont behind them. The depth shows in producers like Poderi Aldo Conterno in Barolo, Domaine de Chevalier from Bordeaux, and Domaine de la Romanee Conti, alongside grower and house Champagne from Pol Roger and Charles Heidsieck. Whites are secondary, mostly white Burgundy, and rose and dessert are token categories, so steer guests who want range toward the reds and the bubbles. Note there is no by the glass program at all, every order is a full bottle, and prices run high with native examples around 115 to 360 EUR, so this list rewards a guest who came to commit to one serious bottle. Know the Champagne and the Bordeaux and Burgundy benches cold, because that is where most tables will land.
