The bent is clearly toward natural and small grower wines, so expect names like Noëlla Morantin, Hervé Villemade, and the local Bonnet Huteau rather than big houses, with Alsace and Rhône filling out the rest. There is no glass program at all, so everything is sold by the bottle, and pricing runs accessible for a one star room, with plenty around 75 to 110 EUR and reaching up toward the low 200s. Whites outnumber reds and rosé is an afterthought at four wines, so steer the table toward Loire and Burgundy whites and the grower reds. It rewards a guest who wants character and a sense of place over trophy labels.
