New Sheridan Chop House
This is a big steakhouse list, 422 bottles built squarely around red wine, which makes up nearly three quarters of what we pour, with Napa Cabernet, Bordeaux, and Burgundy carrying the depth. The house has a clear Pacific Northwest streak too, with Pine Ridge our most listed producer at 20 bottles and Washington names like Seven Hills and L'Ecole No. 41 well represented, plus serious Italy in Gaja and Brunello di Montalcino. The range is enormous, from a $17 bottle to Petrus, Screaming Eagle, and Harlan at the top, but the median sits around $210, so this rewards the guest who wants a trophy as much as the table looking for a solid pour. The glass program is small at 20 selections, so steer by the bottle list when someone wants something specific. Sparkling and white are present, Taittinger among them, but rose is an afterthought at six wines, so know that going in.
