This is a serious, deep cellar of over 6,300 wines, built on the European classics with real obsession in a few corners. The backbone is white Burgundy, Piedmont, Bordeaux, and Northern Rhone reds, but the signature is Austria, where the Wachau runs deep through Knoll, Prager, and F.X Pichler, who together account for hundreds of listings. There is plenty of blue chip Burgundy too, with Domaine de la Romanee Conti, Comte Liger Belair, Sylvain Cathiard, and Pierre Yves Colin Morey all well represented, so collectors and trophy hunters will find what they want. Reds outnumber whites overall, Champagne and German Riesling round out the depth, and dessert and fortified options are generous. The glass program is modest at 29 pours, so by the bottle is where this list rewards a guest who knows the regions and wants to dig.
