Expect real depth in Sangiovese, with Brunello di Montalcino, Selvapiana out of Rufina, Castello dei Rampolla and Fontodi all showing strongly, plus a serious Etna section anchored by Passopisciaro and good northern whites from Terlano. Champagne is the main outside focus, especially Montagne de Reims and grower Meunier bottlings. The glass program is modest at 21 pours against the size of the cellar, so steer guests who want range toward bottles, and the native pricing starts low, around 25 euros, so there are honest options before you climb. This list rewards a guest who knows Tuscany and wants to go deep, and the floor should lean on Sangiovese and Etna when guiding.
