This is a big list, 666 bottles, built around natural and low intervention winemaking, and you should know up front there is nothing by the glass, so everything is a bottle sale. The backbone is roughly even between red and white at around 255 each, with a serious sparkling and Champagne section above it, plus pockets that tell you who they are: Jura, Baden, and skin contact wines under sous voile. Look at the producers and the character is obvious, Yann Durieux, Wasenhaus, Radikon, Ganevat, Equipo Navazos for sherry, and Le Coste, so this rewards a guest who already trusts orange, oxidative, and grower bottlings over big name classics. Pricing runs accessible for a Michelin room, with examples in the 77 to 135 GBP range, so you can steer a curious table without scaring them. Rosé is almost nonexistent at two bottles, so do not lead with it.
