Wachter Foodbar
This is a white wine list first and foremost, with 83 of 136 bottles white and the heart of it split between France and Germany, plus a strong Austrian showing through producers like Franz Hirtzberger and Nikolaihof. The depth is in growers, not big names: Bernhard Huber leads with six listings, and you also see Bürklin Wolf, Knewitz, and Pierre Yves Collin Morey, so expect serious German Riesling and Burgundy minded whites. Reds are a clear second thought at 21 bottles, anchored by France and Italy, with Roagna flying the Piedmont flag. Bottles run from around 18 EUR up to the low 100s, so there is real range, but the glass program is essentially nonexistent at one pour, meaning this is a list built for guests committing to a bottle. It rewards the table that wants a thoughtful white, especially Riesling or white Burgundy, more than the drinker looking for a quick glass or a big red.
