Alain Ducasse at The Dorchester

This is a deep, classically French list of nearly 950 wines built around Burgundy and Champagne, with real strength in white Burgundy. Meursault and Chassagne Montrachet are well represented, and the producer roster runs through serious names like Domaine de Montille, Thomas Morey, and the biodynamic wines of Nicolas Joly. Reds lean Bordeaux and Burgundy, with Pauillac and Gevrey Chambertin showing depth, and the sweet section is a genuine standout. Sauternes runs 27 wines deep and includes 14 listings of Château d'Yquem alone. Bottles open around 125 to 230 GBP and climb hard from there, so this is a cellar that rewards a guest who knows what they want, though the 44 wines by the glass give you a way to pour seriously without committing to a bottle.
