Bones

This is a steakhouse list, and it drinks like one. Of the 46 wines, 43 are red, almost all big and structured, with Cabernet Sauvignon dominating at 19 bottles and California the deepest region at 11, anchored by Napa names like Spottswoode, Staglin Family, and Morlet. There is real top end firepower here, from Harlan Estate and Staglin at $1,299 up to Mouton Rothschild Pauillac at $3,499, but the median sits around $210 and entry starts at $65, so you can still find honest steak wine without selling the table a trophy. Beyond California, look to the Rhône for Jean Louis Chave Hermitage and a bit of Bordeaux, with only token whites, so steer white drinkers carefully. There is no wine by the glass, meaning every recommendation is a full bottle commitment, so read the table before you pour.
