Callie runs 410 bottles built on a serious old world spine, with red the deepest category at 156 and white close behind at 114, plus a real bench of sparkling at 45. The center of gravity is Burgundy and grower Champagne, think Domaine de Montille, Emmanuel Rouget, and Jacques Selosse, alongside a notable Etna run from Girolamo Russo and Loire reds from Clos Rougeard. Pricing is wide and mostly fair, from $50 up to $1,800 with a median around $168, so there is plenty to sell in the low triple digits before you climb into the grand cru and prestige cuvée territory at the top. Note there is no wines by the glass program, so everything here is a bottle conversation. This list rewards a guest who knows producers and wants Burgundy, Champagne, or off the beaten path Italy and France, and it asks you to guide them by the bottle.
