This is a big, red driven list of 570 bottles built squarely around New World Cabernet and California, with 390 reds against just 126 whites, so think Napa muscle first. The depth runs through cult and collector names: a deep Nickel & Nickel vertical, plenty of Orin Swift, Dominus, and Quintessa, along with Littorai and Domaine Serene for the Pinot and Chardonnay drinkers. Italian reds and Bordeaux give it a second and third leg, and the top end goes all the way up, with multiple Screaming Eagle bottlings, Chateau Margaux, and DRC Echezeaux pushing past five grand. Pricing is broad though, opening around $13 with a median near $140, so it is accessible if you steer guests well. The 44 wines by the glass are generous enough to pour around the list, and this rewards anyone selling California Cabernet and serious collector bottles.
