Council Oak Steaks & Seafood

This is a steakhouse list built for red wine, with 260 of the 343 selections in red and California sitting at the center with over 100 entries. The depth is in Napa Cabernet and proprietary blends, so expect to pour a lot of Caymus, Silver Oak, Darioush, Groth, and Orin Swift, with Paul Hobbs and Duckhorn rounding out the cult to mainstream range. France gives the list its prestige corners, led by red Bordeaux blends, a tight Champagne section, and a handful of Domaine de la Romanee Conti, while whites at 46 and rose at just 5 are clearly secondary. The 28 by the glass pours, weighted toward red, make this approachable for a guest who does not want to commit to a bottle. It rewards the steak drinker who knows their California Cabernet and the big spender chasing a trophy from Burgundy or Champagne.
