This is a big steakhouse list, 473 bottles built squarely around California Cabernet and proprietary red blends, with reds making up the overwhelming majority and Paul Hobbs, Caymus, Bond, and Orin Swift all carrying real depth. Above the everyday Napa bench it climbs into serious collector territory, with Penfolds, Gaja and Tuscany, red Bordeaux, and a trophy tier topped by multiple vintages of Petrus, Screaming Eagle, and several Domaine de la Romanee Conti bottlings including La Tache. Whites and sparkling are present but thin by comparison, roughly 49 whites and 38 sparkling against 349 reds, so steer Chardonnay or Champagne drinkers carefully. Bottles run from $18 to $16,000 with a median near $225, meaning there is plenty under three figures but the heart of the list assumes a guest spending up around steak prices. The 29 wines by the glass give you enough to pour by hand, though this list clearly rewards the table ordering a bottle of Cabernet.
