This is a big, red driven cellar, over 1,000 selections with 542 reds anchoring the whole thing, and it earns its Wine Spectator Best of Award of Excellence on sheer depth. The backbone is Napa Cabernet and Bordeaux, with Eisele and Diamond Creek leading the California side and Beaucastel and Ridge giving it heft, plus a serious Italian run through Sangiovese, Brunello from Canalicchio di Sopra, and Antinori. It goes very deep at the top, with DRC, Petrus, and Salon pushing past $5,000, but the median bottle sits around $125 and entry points start as low as $8, so you can sell up or down without leaving the list. The 26 by the glass pours are modest against a list this size, so steer guests who want range toward bottles or half bottles, of which there are plenty. This rewards the table chasing California Cabernet, Bordeaux, or central Italian reds more than anyone hunting white wine or off the beaten path.
