Green Valley Grill

This is a big, red driven list of just over 600 wines, built around Napa Cabernet and reserve bottlings, with serious French depth in Bordeaux and Burgundy backing it up. Burgundy in particular runs through the house via Louis Jadot and Albert Bichot, the two most listed producers, so you have real options when a guest wants Chardonnay or Pinot Noir with provenance. It is accessible across the board, with bottles starting around $7 and a median near $85, while the top end climbs to Penfolds Grange and Château Margaux at $1,200 for the trophy hunters. The by the glass program is unusually deep at 67 pours, which gives you room to sell well beyond the obvious. Whites and rosé are thinner than the red section, so this list rewards the Cabernet and old world drinker more than someone chasing crisp aromatic whites.
