Le Champignon Sauvage
This is a French leaning list of just over 200 wines, built around red Burgundy from the Cote de Beaune and Cote Chalonnaise alongside a strong Rhone section, with Loire whites and Beaujolais filling out the depth. Reds dominate at 93 bottles against 71 whites, and the list rewards a Francophile palate more than anyone hunting New World options. Bottles start gently around 35 to 45 GBP, and there is a real spread of half bottles in both red and white, which makes it easy to pair across courses without committing to full bottles. The 14 wines by the glass are workable but modest, so steer guests toward bottles or halves when you can. Names to know on the floor are Meffre and Dom Saint Gayan in the Rhone and Durup in Chablis.
