Le Georges

This is a deep, France focused cellar of over 2,300 bottles, weighted heavily toward Burgundy and the Loire, with Côte De Nuits, Côte De Beaune, and a serious run of Loire growers like Clos Rougeard in Saumur Champigny, Ph. Alliet in Chinon, and V. Pinard in Sancerre forming the backbone. The Rhône is well covered on both colors, and the Bordeaux section leans classed growth with the likes of Château Haut Brion and Léoville Poyferré, so red and white drinkers both have real depth to work with. Sparkling and dessert or fortified are each well stocked at well over a hundred references, while rosé is an afterthought at six. Prices are in euros and start in the low hundreds, so this is a list built for guests ready to spend on bottles rather than browse cheaply. Note there is no by the glass program at all, so every pour comes from a full bottle, which rewards tables that know what they want and trust a recommendation.
