This is a big, serious list of 431 wines built around Burgundy and California Cabernet, with red wine doing most of the heavy lifting at 223 bottles. The depth is real at the top end, anchored by ten listings from Domaine de la Romanee Conti, including the Romanee Conti monopole at $22,000, plus strong Barolo from Giacomo Conterno and Giacomo Fenocchio and serious Champagne from Billecart Salmon and Jacques Selosse. It is not only a trophy list, though. Bottles start at $18 with a median around $180, so you can sell value without flinching, and there is genuine breadth in Champagne, Oregon Pinot Noir, Chablis, and esoteric Mediterranean whites. The 30 wines by the glass give you room to work a table at any budget. This list rewards a guest who wants to trade up, but it answers to careful drinkers too.
