Pappas Bros. Steakhouse Houston Galleria

This is one of the deepest lists in the country, over 5,300 bottles built around red wine, with the gravitational pull on Burgundy, Bordeaux, and California and Napa Cabernet, plus a real Barolo section anchored by names like Elio Altare. It rewards the collector and the trophy hunter: prices run from $7 to $50,000, with a 1811 Chateau d'Yquem and first growth Lafite at the very top, but the median bottle sits around $255, so there is genuine drinking to be had once you steer guests off the marquee. Depth shows in the producers, multiple verticals of Bond, Heitz, Colgin, Guigal, and Chave, so we can pour real maturity and vintage range. Strong sparkling and dessert sections too, including a substantial fortified and Champagne run. One thing to know cold for the floor: there is no by the glass program here, so everything sells by the bottle, which means matching the table's appetite and budget to a full bottle is the whole game.
