This is a 322 bottle list built around two poles, Burgundy and central Italy, with the Cote de Beaune and Cote de Nuits together giving us roughly 60 references and a deep Tuscan and Piedmontese spine underneath. Sparkling is a real strength at 54 bottles, leaning hard on Champagne from Montagne de Reims and Vallee de la Marne, with Louis Roederer well represented. The Italian backbone is where the personality lives, with Montevertine and Biondi Santi in Tuscany, Giacomo Conterno and Gaja in Piedmont, and Valentini for something off the beaten path. Reds and whites are balanced at 61 and 57, while rose and dessert are thin, so steer guests elsewhere there. With native bottles starting around 16 to 25 EUR there are honest entry points, but the by the glass program is small at 13 pours, so this list rewards a guest committing to a full bottle, especially one who wants to drink Burgundy or serious Sangiovese.
