This is a 3,000 bottle cellar built around Burgundy, and red Burgundy in particular, so know the village names before service: Vosne Romanée, Gevrey Chambertin, Chambolle Musigny, and Nuits Saint Georges all run deep, with serious vertical and producer depth from the likes of Méo Camuzet, Anne Gros, and Denis Mortet, plus white Burgundy benchmarks such as Coche Dury. California holds up the domestic side, led by Napa Valley and the Central Coast, so we can pivot a Burgundy drinker toward Cabernet without leaving the comfort zone. Prices span $40 to $23,000 with a median near $300, meaning there is real entry level footing here even though the top end runs to Romanée Conti and Screaming Eagle. Be clear with guests that there is no glass program, so everything is by the bottle. This list rewards the table that knows Burgundy or wants to learn it, and the collector chasing back vintages of grower Pinot and grand cru white.
