Sihlhalde

This is a serious, classically built 232 bottle list anchored in France and Italy, with Bordeaux the deepest single category and a strong vein of Burgundy running through it, much of that from Louis Latour, who shows up more than anyone with 17 listings. Italy is the clear second pillar, led by Tuscany and Tenuta San Guido for Sassicaia, with Antinori and Gaja backing it up, and Spain holds its own through Hacienda Monasterio and Bodegas Aalto. Reds carry the most weight at 40 selections, but whites are nearly as deep, and there is real range in format, from the Tresor single bottles to a full run of large formats for the table. The by the glass program is tight at 10 pours, so steer glass drinkers there and open bottles for anyone who wants to explore. This rewards a guest who knows Bordeaux and Tuscany and wants to drink at the top end, and it gives you plenty of room to trade up.
