This is a French leaning list built on Burgundy, Champagne, and Bordeaux, with 195 bottles split fairly evenly between white and red and a deep sparkling section of 34. The Burgundy and Champagne depth is the real strength, with Laurent Perrier showing five listings and Christophe et Fils and Dominique Laurent giving us grower and small house options alongside the bigger names, while Bordeaux leans on the classed growth weight of Château Latour. There is range beyond France too, including Italy, New Zealand, and a few South African pours from Glenelly Estate. Prices run from accessible to serious, with bottles starting around 185 HK$, so we can meet a table at almost any budget. The 16 wines by the glass cover the main bases, and this list rewards a guest who wants classic Burgundy and Champagne done properly rather than something off the beaten path.
