The Conservatory at Goodstone

This is a deep, France and California leaning list of over 1,100 wines, built around Burgundy, Bordeaux, and the California coast, with real strength in white Burgundy and Sauvignon Blanc thanks to a heavy run of Domaine Didier Dagueneau at 25 listings and producers like Etienne Sauzet and Domaine Weinbach. Reds dominate at 348 bottles, but the sparkling section is serious too, anchored by Billecart Salmon and a full bench of Champagne houses. Pricing is genuinely wide open, from $16 up to a $8,900 Domaine de la Romanee Conti, with a median around $235, so you can drink modestly or go deep into trophy Burgundy and Bordeaux Petrus depending on the table. The 38 wines by the glass give you room to work most guests without opening a bottle. This list rewards collectors and Burgundy and Champagne lovers, but it has enough accessible bottles that you can take care of a casual diner just as easily.
