This is a deep, Burgundy anchored list, over 2,100 wines with 140 Burgundy entries alone, and it leans hard into ageworthy whites and reds from serious growers like Roumier and Marquis d'Angerville. California has real weight here too, with Littorai and Arnot Roberts among the most listed producers, plus strong showings in Sonoma Pinot Noir and Chardonnay, and there is genuine depth in German Riesling through Keller and Egon Muller alongside Italy in Piedmont and Tuscany. Reds dominate at 835 bottles against 554 whites, and the range runs from a $14 pour all the way to an $8,950 Coche Dury, with a median near $198, so there is real entry level value if you steer guests there. The 31 wines by the glass give you room to work, but the heart of this list is the bottle book and the collector grade Burgundy and Napa at the top end. It rewards the guest who knows what they want and trusts you to find the bottle.
